Les Dangereux

How a tasting menu called La Voyage — and a final, defiant avocado toast — was born in the weeks before opening.

As Cafe James became the only café in either Dubai or Abu Dhabi inducted into the inaugural Michelin Guide, James walked away from the business for good. His only focus now: open Les Dangereux — a restaurant with no previous iteration, no existing category, no path to follow.

The goal was set without a single doubt: a Michelin star in its first year. It meant teaching a crew of cooks classic French sauces for the first time — simmering 100kg of beef bones for two and a half days for 1.5 litres of jus — and going from $9 coffees to sixteen-course tasting menus.

La Voyage — Course No.1, the Marlboro Avocado

To do a true tasting menu, there had to be a story — not just lighter to heavier for its own sake. The problem wasn't too few stories; it was too many. So James let what was actually happening become the story.

A cylinder tuile filled with buttery avocado and olive oil. Crème fraîche and trout roe at the tip in place of smoked salmon; vinegar powder for acid and to recreate the white-and-brown two-tone of a filter. Saffron hollandaise, served on an ashtray. His first dish on the opening menu — and, symbolically, the last avocado toast he'd ever make professionally, after selling the recipe more than thirty times in his consulting years.

Course No.2 — Caviar & Egg

The flood gates opened. Within days the entire menu was finalized, and they named it for exactly what it was for them and would be for their guests: La Voyage.

From the snail reimagined with a spherified laban, to a confit-potato "rösti" rolled in a tamago pan, to A5 wagyu with Roquefort endive and bone-marrow tempura — each course earned its place. On the terrace, Les Dangereux runs its own à la carte menu with a single rule:

Design — Part I · Los Angeles · 1999–2009

James's first career spanned a decade in fashion design, as Creative Director for Morphine Generation and COA — City of Angels, earning the GenART Best New Designer award for Morphine's 2006 Spring Menswear Collection. In 2006 he co-founded BOXeight Studios, a creative agency producing campaigns for L'Oréal, Sephora, Lexus and Nike, which the City of Los Angeles appointed as official producer of LA Fashion Week from 2008–2010.

F&B — New York City · 2009–2015

With virtually no culinary experience, he began unpaid under Chef Shane McBride at Balthazar, then cooked at NYTimes three-star Le Cirque. He worked under Mads Refslund (co-founder of NOMA) at ACME, honed farm-to-table technique at Brooklyn’s Roberta’s / Blanca, and led kitchens at Prospect and Skål — each earning Michelin Bib Gourmands. He was an opening member of Mu Ramen, named No.1 ramen in New York by NYT critic Pete Wells, and closed his New York tenure as Chef de Cuisine at one-star Caviar Russe.

Design — Part II · United Arab Emirates · 2015–present

In 2017 he opened NOTES, an 89 sqm café in Abu Dhabi that became a viral success. Through his firm InSitu — later White Hospitality Group — he developed his own acclaimed F&B outlets: Cafe James, Les Dangereux and MR KIM, a Korean steakhouse reflecting his heritage. James personally led nearly every element of each concept — architecture, renders, uniforms, graphics, photography, and custom equipment from a simple V60 case to a 1.5-tonne natural-fuel BBQ smoker.

He stepped down from White Hospitality in 2025 and is now focused on architectural, culinary and AI-based POS software projects, opening a new chapter back in New York City.
